Healing Carrot Turmeric Ginger Soup is a delicious, wholesome, and warming soup that will sooth your stomach and keep you satiated. This recipe is Immune supporting, Gut healing, and Anti-Inflammatory support.

This soup has turmeric which is anti-inflammatory . ginger which is anti-microbial, garlic and onion which are both antiviral.


Ingredients

  • Dozen 12 Carrots
  • Olive oil
  • 1 large onion
  • 2 cloves of garlic
  • 3 nubs of ginger (to taste)
  • 2 table spoons of turmeric
  • 1 teaspoon cinnamon
  • 2-3 springs of Rosemary
  • 2cups of liquid stock (you can make this from powder of make your own)
  • 1 can of coconut cream
  • 1/4 teaspoon of pepper (to taste)
  • 1/4 Teaspoon of salt (to taste optional)

Instructions

  1. Preheat oven to 200 degrees.
  2. Peel carrots
  3. Slice or dice, carrots and onion depending on thickness.
  4. peel garlic
  5. Place on baking pan drizzle with olive oil and add spices (turmeric, cinnamon, salt and pepper) .
  6. Roast in oven until tender, about 20 minutes.
  7. Cool slightly
  8. In a food processor, add all ingredients.
  9. Blend until well-combined.
